MintBox3 USB booting

MintBox3 Pro. I love this thing.
I would like to boot from a usb stick. Prepared a stick with Linux Mint Mate 20.
I insert it in the front jacks (carefully, potential for shorts if backwards).
Boot into the regular drive.

Went into the BIOS. There in the boot order I see it boots the Me Drive first.
I see the stick. Click on that and move it to first place.
THEN it boots the stick.

But I I boot again, it does not remember the BIOS setting, and goes back
to the Me drive.

Also, is there any way to have boot from *any* bootable USB stick, not just
one with the UUID shown in the BIOS?

Lastly, if I mess this up, and end up with an unbootable computer, can I just
go into the BIOS and "reset to default"? I would think it would, but no harm
in asking.

I should also mention, this BIOS is:
AMI 5.3
BIOS VERSION ATOP3.MB3.0.30.03
12/3/2019 @ 16.41.10

This is an Aptio BIOS from AMI.
Every post I've seen, even instructions from AMI refer to earlier versions.
The screens and videos do not look like this one at all.

So there, Fit-iot. You commissioned this beast. Any help? Or
do we need to go back to an earlier BIOS?

Please take a look at the BIOS MintBox3.
Accordingly to this page you have a previous version (0.30.03). So I'd recommend you to upgrade your BIOS to the 0.30.04 from 12-Feb-2020

Willing to try the update.
I would need a link to the file (I could only find Phoenix files in your site)
And instructions. Please note, I do not have easy access to anything Microsoft,
I would *much* rather do all updates using Linux computers, of which I have
over 20, and nothing Microsoft on the premises.

Did you visit the page I've posted before? All links to the BIOS files are posted there. Here the last version:

Just please clarify your note about Microsoft. We store our files on Amazon Cloud storage.

I followed your links, all went well and the BIOS updated successfully.
If you go into your website, thru the search: Airtop3 BIOS or search: Mintbox3 BIOS
they lead to Phoenix BIOS files. However, your links above took me to the AMI files.

As far as USB booting, I do not think anything has changed. Will investigate
more during the week. The ":Quick Settings" is handy.
